It's time for cheese. There are articles about it, TV programs, it's more and more eaten and liked. Onaf, founded eleven years ago, has been the first organization to understand the importance of this typical Italian food and its potential success. Our predictions are now coming true. Cheese is changing today's way of eating. A new eating season is now starting, where knowledge of cheese increases the pleasure of eating it. Onaf's task is now hard, because the true culture of cheese is not easy to spread. We want to leave to the television and its ads the false culture, the one of cheese that's always the same, one year after the other, that cheese that's lost its soul, that concentration of proteins and fat that made it unique. In tasting, we go from this kind of cheese, industrial and anonymous, to arrive to rare and typical cheese, hand-made.
